PROBLEM TO BE SOLVED: To obtain an amino acid derivative capable of suppressing and reducing bitterness, astringency and undesirable aftertaste by adding fine amount thereof to food tasted with a high-sweetness degree sweetener such as saccharin. SOLUTION: This amino acid derivative is expressed by formula I (when X is N and Y is NH, Z is O and *1 and *3 are each a double bond; when X is NH and Y is N, Z is O and *2 and *3 are each a double bond; when X and Y are equally N, Z is OH and *2 and *4 are each a double bond; R is a side chain derived from an amino acid), formula II (when X is NH and Y is N, Z is O and *1 and *4 are each a double bond; when X is N and Y is NH, Z is O and *2 and *4 are each a double bond; when X and Y are equally N, Z is OH and *1 and *3 are each a double bond), formula III (when X is NH2 and Y is N, *2 is a double bond; when X and Y are equally NH, *1 is a double bond) or formula IV (same as the definitions in the formula III), e.g. N-(1-methyl-4-hydroxy-3-imidazolin-2,2-ylidene)alanine. The derivative is obtained by a synthetic method using creatinine and alanine, etc., as raw materials. |
