PROBLEM TO BE SOLVED: To obtain a compound useful for generating an oil and fat composition having good taste and no foaming, good in release properties in cooking fries, capable of cooking without scorching even a small amount of the compound is used. SOLUTION: The objective compound is an ester compound of a fatty acid with glycerol or polyglycerin, where one residual group of a constituent fatty acid is a 2-12C fatty acid residue and the other residual group is a 14-22C fatty acid residue, a weight ratio of the residues is 20/80/-80/20 and the degree of esterification is 20-80%. The average degree of polymerization of the polyglycerin is preferably 2-10. As species of the constituent fatty acid, a long chain fatty acid containing >=60% unsaturated fatty acid such as oleic acid, etc., can be preferably cited. The oil and fat composition is allowed to contain preferably 0.1-3wt.% polyglycerin. |
