Purification method of sucrose fatty acid ester is composed of ; a) neutralizing the reaction mixture of preparing the sucrose fatty acid ester by acid,b) recovering solvent by vacuum evaporation, c) dissolving the residue with water, d)passing through the column filled with nonionic resin made by polymerizing styrene and divinylbenzene, e) adsorbing the sucrose fatty acid ester to the resin at 10~60 deg C, f) washing with distilled water to remove residual solvent and excess sucrose,and g) desorbing the sucrose fatty acid ester by using polar organic solvent (ethanol,methanol,acetone,acetonitrile,isopropyl alcohol,etc.)
