Process for the inactivation of carboxypeptidase Y in hirudin-containing culture broth

Inactivation of carboxypeptidase Y (CPY) in a hirudin-contg. culture broth produced by culturing a transformed yeast is effected by passing the culture broth through a tube which has a heating section, a "residence time" section and a cooling section and in which the broth is heated to 80-100 degrees C.
