PROBLEM TO BE SOLVED: To produce a catalase useful for industrial use, etc., in high yield at a low cost by carrying out the feeding culture of a mold belonging to the genus Thermoascus, Acremonium or Aspergillus using ethanol as a carbon source and separating the product from the cell and the culture medium. SOLUTION: The objective catalase useful as an industrial enzyme, etc., is produced in high yield at a low cost by carrying out the feeding culture of a mold such as a microorganism belonging to the genus Thermoascus (e.g. Thermoascus aurantiacus IFO 9862), Acremonium (e.g. Acremonium alabamensis ATCC 26796) or Aspergillus (e.g. Aspergillus terreus IFT 4100) in a medium containing ethanol as a carbon source under aeration to produce and accumulate the catalase in the cell and in the supernatant of the culture medium, separating the microbial cells by centrifugal separation, etc., extracting the cells with water, etc., after disintegrating by grinding, autodigestion, etc., and extracting the culture liquid with cyclohexane, etc. |
