PROBLEM TO BE SOLVED: To obtain the subject compound exhibiting surface activating action, bacteriostatic action, etc., end having low content of by-products especially a long-chain fatty acid or its salt, a nitrile, etc., high purity and low stimulation. SOLUTION: This N-long chain acylamino acid is expressed by formula I (R<1> CO is an 8-22C saturated or unsaturated fatty acid residue; R<2> is H or a 1-3C alkyl; R<3> is a 1-5C alkylene; X is a halogen), e.g. N-lauroyl-β-alanine. The compound of formula I can be produced e.g. by reacting a fatty acid halide of formula II such as lauric acid with an amino acid of formula III such asβ-alanine in the presence of a basic substance such as NaOH or by hydrolyzing an amidonitrile in the presence of a basic substance such as KOH at 60-110 deg.C. The reaction product is incorporated with an inorganic acid such as hydrochloric acid to lower the neutralization degree to <=1.0 and the product is washed with a solvent having a solubility parameterδ[cal/mL] of <=10.0, e.g. hexane to obtain the objective compound.
