Device holds parallel strands of extruded sausage meat on gratings, esp. on grids, for the manufacture of hard sausage products, esp. of Knabberstaebchen. The grids (1) have holders (3, 4) at the top, and if appropriate, also at the base, with U-section rests (5) to receive the ends of the sausage strands (11). A mating gripper strip (8) is then placed on the holder (3, 4). Having trapped them, a needle (7) is inserted into the sausages, transverse to the holder or along the holding strip (8).
