PROBLEM TO BE SOLVED: To produce processed kelp capable of producing processed kelp products safe for human bodies with making the best use of taste inherited to the kelp. SOLUTION: This production of processed kelp consists of a first process in which raw dried kelp is dipped in fresh water and kelp water including the kelp is extracted by boiling down to obtain an extract to be a source solution of a soup for noodles, a second process in which the kelp in the kelp water is left as it is, dried and naturally dried in a shadow to have a predetermined water content, a third process in which the dried kelp is roasted by hot air for a predetermined time and a residual taste included in the kelp is exposed as mannitol after the process and a thinner broth than the above mentioned extract can be obtained by using the kelp and a fourth process in which the so called kelp soy sauce and kelp boiled down in say can be obtained e.g. by dipping the kelp in the soy sauce. |
