摘要 PROBLEM TO BE SOLVED: To provide a packaging method so designed that a gelling agent is made to adhere to the surface of a fish-paste product followed by packaging the product and then subjecting it to heat sterilization to ensure the resultant fish-paste product processed noodle- or fiber-fashion not to firmly bind due to the heating. SOLUTION: A gelling agent is made to adhere to the surface of a noodle-like or fibrous fish-paste product such as fish thin vermicelli followed by packaging the product and then subjecting it to heat sterilization. Thereby, the dehydration from the surface of the resultant fish-paste product is suppressed and can be easily disaggregated even if the product has gotten lumpy in appearance. The gelling agent such as agar-agar or gelan gum is made to adhere in the form of an aqueous solution and then solidified; for e.g. alginic acid, solidified with a solidifying agent; for e.g. curdlan, solidified under heating.
