PROBLEM TO BE SOLVED: To readily obtain the subject compound from an available raw material by affecting a hydrolase capable of hydrolyzing a bond between a sugar and a compound having fragrance to a glycoside derived from a plant and having a residue of the fragrant compound, and recovering the fragrant compound from the reactant. SOLUTION: The objective compound (e.g. linalool) having fragrance is obtained in a ready process and from an available raw material by adding a bud of Jasminum sambac to an aqueous solution of 80% methanol, extracting at 4 deg.C for 1hr, filtering resultant extract, condensing resultant filtrate, separating a glycoside derived from a plant and having a residue of a compound having fragrance [e.g.; (S)-linalyl-β-glucopyranoside] by column chromatography, affecting a glycoside hydrolase capable of hydrolyzing a bond between a sugar and a compound having fragrance in the glycoside (e.g.;β-glucosidase) to generate a compound having fragrance, and then recovering the compound having fragrance from the reactant.
