PURPOSE:To efficiently remove floating suspended solid matter, by allowing a flocculant to act on the boiled cooking liq. of marine products under alkaline conditions. CONSTITUTION:The marine products such as a sardine, a mackerel, and a mackerel pike are boiled in a cooker, and removed a solid matter by expression, and a high-temp. broth is obtained. A basic substance such as sodium hydroxide is added to the broth to control the pH to 7.5-13. A sodium polyacrylate-based or polyacrylamide-based high molecular flocculant is further added to the broth to flocculate the floating suspended solid matter, and flocs are formed. The flocs are then removed by filtration, precipitation, etc. As a result, a good- quality refined product such as a condiment is obtained. |
