摘要 PROBLEM TO BE SOLVED: To eliminate various error factors and improve the reliability and rapidness of measurement by applying physical force to a plurality of boiled rice block samples supported by a supporting means, and measuring the tissue sense of boiled rice by detailed items. SOLUTION: Boiled rice is formed into the shape of seasoned rice rolled in laver and cut into a plurality of boiled rice block samples of specified size and weight. A rotatable supporting means 400 keeps a plurality of cut boiled rice block samples to the same temperature until the completion of measurement. A boiled rice block measuring means 500 applies physical force to each of a plurality of boiled rice block samples supported by the supporting means 400 and measures the tissue sense of the boiled rice by detailed items. A cylinder 640 for a measuring sensor is a kind of spring gage, and senses the pressing force of the boiled rice in the holding means 400 on a platform 650 and inputs it to a computer. The hardness, stickiness, elasticity, and the like of the boiled rice is measured according to a program prestored in the computer.
