PROBLEM TO BE SOLVED: To obtain readily handleable, low-viscosity and hardly digestible polysaccharides capable of retaining a low viscosity even when converted into an aqueous solution in good yield by treating a gum containing galactomannan as a principal constituent component with an extruder under specific conditions and then treating the resultant treated gum with an enzyme. SOLUTION: This food is obtained by adding water containing an inorganic salt (CaCl2 , MgCl2 , etc.) and an inorganic acid (phosphoric acid, etc.) to a gum consisting essentially of galactomannan such as guar gum or locust bean gum, heat-treating the resultant mixture with an extruder, dissolving the prepared powder of hydrolytically treated polysaccharides in water, reacting a galactomannase and/or a cellulase with the produced solution, inactivating the enzyme by heat treatment, filtering the solution and depositing the polysaccharides from the resultant transparent solution with an organic solvent. |
