A process for manufacturing meat chunks which comprises: chopping and heating a mixture of meat material, water and konjac in order to get a heated meat emulsion, adding an alkali agent to the emulsion for raising the pH of the emulsion, gelifying the emulsion by further heating the emulsion, and dicing the gelled emulsion into chunks. |
