<p>A method for processing a liquorice extract containing 4-20 % glycyrrhizic acid and 10-40 % dry matter, in particular to enable glycyrrhizin and a glycyrrhizin-free juice to be recovered after a step in which the extract is acidified and the acid glycyrrhizin is separated by precipitation. The method comprises a step of electrodialysing the glycyrrhizin-free juice to lower the mineral salt content thereof. The extract acidification step may also be performed by electrodialysis.</p> |
