摘要 <p>As a result of a long prefermentation time, the round dough balls increase their volume by at least three fold and are thus opened up so that a low thrust suffices for pressing to form a uniform flat dough plate and, as a result, the fermentation gases are retained in the dough plate. Secondary fermentation can be dispensed with. The pressing process is carried out on a heatable revolving belt, the pressing stamps for carrying out the pressing process being matched to the advance of the belt. The round dough plates can be prebaked on the revolving delivery belt. The pressing stamps are furnished with exchangeable and heatable pressing heads, a counterthrust support being assigned beneath the continuous belt to each pressing stamp. The use of additional baking supports in the form of baking sheets can be dispensed with.</p>
