The fermentation method comprises containing DNA controlled by a promoter of ADH2/GAPDH. Especially, a glucose as a carbon source is provided at a regular rate during the first stage of fermentation, the addition rate of the glucose is controlled to maintain the concentration of ethanol constantly in a culture medium when the concentration of the glucose is zero, whereby remarkably improving an incidence rate of specified proteins.
