Prodn. of fruit and/or vegetable preserves and/or pickles, esp. pickled gherkins, involves placing the fresh, washed and presorted gherkins (on a chute) in prepd. containers (glass jars or tin cans) and adding liquid, e.g. of vinegar, water and spices; sealing the containers; and preserving by pasteurisation. The novelty is that the fresh gherkins are first sorted and weighed to a predetermined net packing wt. by automatic scale completely integrated in the prodn. line. |
