PURPOSE: To process fishes for the general public such as sardine, mackerel, etc., having a high nutritive value so as to make them readily edible and easily handleable. CONSTITUTION: This method for processing and treating small fishes comprises chopping spindle-shaped small fishes such as sardine, mackerel, etc., in a raw state into barrel-shaped slices 3a to 3c, removing internal organs of the chopped slices 3a to 3c, washing the slices with water, roasting the slices, boiling the slices 3a to 3c in a seasoning solution, allowing them to cool and skewing the slices. |
