FIELD: fish-processing industry. SUBSTANCE: method involves keeping preliminarily prepared octopuses in aqueous solution of collagenase for at least 20 min. This treatment is followed by pickling in table salt solution (7.0-7.5%) for 4-6 h and keeping the half-finished product to mature at 45-50 C for at least 120 min. EFFECT: higher half-finished product quality. |
