Food contains fatty ingredients which are runny when warm or hot, are grainy at room temp. and solidified when cooled in a chilled mantle. In a process to produce this food, the novelty is that the mass of ingredients are continually agitated and mixed while the food is subjected to cooling, in that the mantle in which the food is held, and the assembly within the mantle which mixes and scrapes food from the inner mantle face, are continually moved with respect to each other. In the period between commencement of the granulate formation and its completion, the mantle and mixing assembly repeatedly change direction with respect to each other to a speed which is between 1.2 and 20 times different to the previous relative speed. The opposing relative motions are uniform in the lower mantle zone, and at given intervals in the upper mantle zone. The mixing process is controlled by information derived from the temperature of the cooling mass. |
