PROBLEM TO BE SOLVED: To obtain a starch preparation contg. a mixture of thinned tapioca starch with gelatin and a polyol, suitable for use as a base for gum and pastille, safe to teeth and usable as a substitute for cariogenic gum arabic. SOLUTION: This starch preparation contains a mixture of thinned tapioca starch (A) with gelatin (B) and a polyol (C). The component A is preferably hydroxypropyl tapioca starch thinned with an acid so that 30 wt.% aq. soln. has a Brabender peak viscosity of 150 Brabender units and the DS of the thinned starch is 0.1-0.12. The component C is preferably a maltitol syrup contg. 75% maltitol. The pref. amts. of the components A, B and C are 33 wt.%, 2 wt.% an 56 wt.%, respectively. |
