PURPOSE: To obtain a vanilla extract strengthened in an ability to impart a fragrance and a flavor similar to those of vanilla, no having a characteristic shell smell or bean smell, and having a concentrated mellow, mild and ripened mouth touch by extracting a vanilla bean material in the presence of an alkali (salt). CONSTITUTION: A vanilla bean material (e.g. bourbon vanilla beans, Mexican vanilla beans) is extracted with water and/or a water-soluble organic solvent (preferably ethanol, propylene glycol and/or glycerol) in the presence of an alkali or alkali salt (an alkali hydroxide, an alkali metal carbonate). The extraction solvent is preferably the mixture of the water with the water-soluble organic solvent. The alkali (salt) is preferably used in an amount of 0.2-2wt.% per 1 pt.wt. of the vanilla bean material, and the pH of the vanilla extract is preferably 7 or smaller. A polyhydric alcohol such as sorbitol may be added in order to prevent the generation of precipitates during the storage of thc vanilla extract. |
