TREHALOSE-CONTAINING HAM, SAUSAGE AND PRODUCTION OF THE SAME

PURPOSE: To obtain ham or sausage preventing deterioration of quality caused from a microorganism, improving elasticity and capable of reducing an amount of a nitrite by containing trehalose. CONSTITUTION: Raw material meat contains a small amount of trehalose (preferably α,α-trehalose) in a weight ratio of the former/the latter about 100/(0.01-20). Ham or sausage having stabilized quality, improved adhesivity of the raw material meat to a film and without generating discoloration in a retort sterilizing or a boil sterilizing is obtained.
