Grinding device for shaped knives

The grinding device is for sharpening knives (2) with one smooth and one undulating side plate (4) and a concave, convex or straight cutting edge. The knife is not sharpened on the smooth side plate but on the undulating one, using a suspended shaped disc (23). A sensor (21) in working connection with the shaped disc guides it relative to the surface outline of the undulating side plate. The turning axis (22) of the shaped disc is roughly parallel to the plane of the knife and to the tangent to the coarse outline (3) of the cutting edge (5) of the knife.
