PURPOSE: To efficiently obtain galactosyltrehalose which is useful in food products, medicines, chemicals, animal feeds and the like by allowingβ- galactosidase to act on a mixture of trehalose and a galactose source to displace a galactose residue to trehalose. CONSTITUTION: Trehalose and a galactose source (e.g. lactose) are dissolved in 10mM phosphate buffer (pH=6.0) andβ-galactosidase prepared from Bacillus circulans is admixed thereto. The mixture is heated at 37 deg.C for 15 minutes to displace a galactose residue to trehalose and boiled at 100 deg.C for 5 minutes to stop the reaction. The reaction mixture is subjected to partition high- performance liquid chromatography using, as an eluent, acetonitrile:water = 75:25 mixed solvent to give the objective purified galactosyltrehalose which is represented by the formula (Gal is galactose residue; Tre is trehalose), excellent in storage stability, physiological functions and physical properties and is useful in food products, medicines, chemicals and animal foods.
