PURPOSE:To produce crumb-like food of good taste in a short time, by treating the raised dough with an extruder at elevated pressure and temperature, roughly crushing and drying. CONSTITUTION:A raised dough which is prepared by the direct method or the sourdough method is fed to an extruder and extruded out at about 60-150 deg.C in a residence time of 20-180sec, then crushed and dried. Or the liquid leaven, cereal flour and other additives are separately fed into an extruder or a sourdough, other materials and raised dough are fed into an extruder separately. |
