PREPARATION OF FERMENTED YACON DRINK

摘要

PURPOSE: To obtain a fermented yacon drink having excellent flavor and taste by using a yacon juice fermented with lactobacillus and a fructooligosaccharide originated from yacon as essential components. CONSTITUTION: This health drink drinkable as a nourishing drink even by a person susceptible to lactose or disliking milk for nourishing can be produced by adding milk or defatted milk powder to (A) a liquid produced by fermenting yacon juice with lactobacillus and having a Brix degree of 10-15 and (B) a yacon juice having a Brix degree of 10-15.
