<p>A food product comprising a matrix of fibres such as proteinaceous fibres. The matrix having inclusion bodies dispersed therein. The inclusion bodies may be of solid, liquid or gaseous nature and may be mechanically robust. The inclusion bodies may comprise particles of oil, fat, inorganic salt, insoluble material, soluble polymer, insoluble polymer, or mixtures thereof. Preferably the product is an extrudate.</p> |
