<p>The invention relates to an apparatus and a method for improving the wettability of agglomerated cocoa and sugar containing powder such as cocoa beverage products. The method according to the invention comprises exposing, in a microwave reflective cavity (19) the agglomerated cocoa and sugar containing powder to electromagnetic radiation of a wave generator (14) at a frequency in the microwave region so as to transmit electromagnetic energy to the agglomerated cocoa and sugar containing powder in an amount sufficient to increase the temperature of the agglomerated cocoa and sugar containing powder to at least 60 °C. The agglomerated cocoa and sugar containing powder contains lecithin as emulsifier.</p> |
