FREEZING OF ROOT OF PANAX GINSENG

PURPOSE: To keep the appearance as well as the taste and flavor of the frozen root of Panax ginseng. CONSTITUTION: The root 1 of Panax ginseng has a number of fibrous fine roots 5 extending outward from the main root 3 and the branched root 4 as shown in the figure (a). In the case of freezing the root 1 of Panax ginseng, the root 1 is packaged with a film 7 in a state to lightly press the fibrous fine roots 5 inward along the main root 3 and the branched root 4 as shown in the figure (b) and the packaged root is immersed in liquid nitrogen L in a tank T for several minutes as shown in the figure (c) to effect the quick freezing of the root 1.
