REVERSIBLE THERMAL GELLING AGENT

PURPOSE: To obtain a new reversible thermal gelling agent which is of a thermal phase transition type, gelating when heated and solating when cooled, by enzymatically partially decomposing side-chain galactose units of galactoxyloglucan. CONSTITUTION: This reversible thermal gelling agent is produced by enzymatically partially decomposing side-chain galactose units of a galactoxyloglucan. The gelling agent having a degree of removal of side-chain galctose units of 30-65% is pref. Tamarind seed gum is more pref. as the galactoxyloglucan. Food cosmetics, and toiletries contg. the agent are still more pref.
