FIELD: food industry. SUBSTANCE: method involves grinding of vegetable raw materials, its sterilization and dilution by alcohol and/or by liquid acid, fermentation, filtration and concentration. Mentioned above dilution is carried out by dispersion of alcohol and/or liquid acid into raw materials or by their uninterrupted feeding into stream of raw materials. Said fermentation takes place with the help of enzymes of microorganisms of citric acid fermentation. EFFECT: improves efficiency of the method. |
