Bakery dough riser box has ventilating devices providing air circulation in the box, and air cooling and heating devices. Box contains a thermocouple temp. detector which provides a signal to a discriminator comprising two bistables which are mainly identical and control the heating or cooling. A voltage distributor comprises a potentiometer of which the slider determines the required temp. inside the box, whilst the voltage between slider set-point and distributor output feeds the other discriminator input.
