STRAIN OF FUNGUS PLEUROTUS OSTREATUS - A PRODUCER OF PROTEIN BIOMASS

FIELD: biotechnology. SUBSTANCE: new strain of fungus P. ostreatus "ВКПМ" F-697 is proposed as a producer of protein biomass. Strain is obtained by selection from the strain P. ostreatus "ВКМ" F-2466 and deposited in All-Union Collection of industrial microorganisms. Proposed strain forms high-protein biomass at submerged growing on the different nutrient medium spectra. Depending on medium composition the strain produces biomass EXHIBITING nonconventional aromas (except for fungal one). Protein content in biomass is 45%, temperature optimum is 26-28 C, optimal pH value is 6.0-7.5. Obtained biomass of the strain P. ostreatus "ВКПМ" F-697 shows valuable properties and can be used in food industry as a protein food addition. EFFECT: enhanced quality of strain indicated above.
