摘要 PURPOSE: To grasp and evaluate the extent of aging of rice quantitatively by determining the extent of degeneration of rice based on the fatty acid in the components of rice and the extent of mixture of unripe rice. CONSTITUTION: Light emitted from a light source 1 repeats transmission and interception in a chopper 4 and the transmitted light is passed through a filter 5A for passing the near infrared light of specified wavelength. The transmitted light is directed toward a ceramic reflector 10 and the reflected light is subjected to photoelectric conversion through a photoelectric detector 8 and A/D conversion 13 before being fed to an arithmetic unit 14. The arithmetic unit 14 determines the reflectance relating to the content of component of fat, i.e. fatty acid, and the fatty acid AF of sample rice is determined based on the reflectance. Mixing rate CG of unripe rice in the sample rice is also determined based on the reflectance relating to the content of chlorophyl obtained simultaneously. Finally, the extent of degeneration, i.e. an index of aging, of rice is determined based on the fatty acid AF and the mixing rate CG of unripe rice.
