PURPOSE: To produce a fried frozen food capable of providing a fried food, having a juicy feeling (a soft and chewy texture) of a frying ingredient and crispiness of a coating and excellent in stability with time, responding to heating in a microwave oven and freezing and molding TEMPURAs without heating. CONSTITUTION: A frying ingredient coated with one or more of a protein, a phosphate and a thickening paste is dusted with starch, wheat flour, etc., or one or more of a coating liquid, a yam liquid, the thickening paste and an aqueous solution of a protein are used as a binder to precoat a part (refuse remaining after frying TEMPURA batter) of a prefried food therewith. The resultant coated ingredient is then coated with one or more of bread crumb and a coating liquid and directly fried or frozen and subsequently fried. |
