<p>PURPOSE: To obtain a pickling bed capable of giving tasty pickles by incorporating residues of e.g. beans after used with a cultured product of animal enterobacteria, common salt and water followed by fermentation at low temperatures with no concomitant odor generation. CONSTITUTION: Residues of beans, grains or potatoes are incorporated with a high-temperature cultured product of animal enterobacteria, common salt and water followed by conducting a fermentation at <=10 deg.C. The culturing temperature for the animal enterobacteria is 35-42 deg.C.</p> |
