DISCOLORATION PREVENTING AGENT FOR PERISHABLE

摘要

PURPOSE: To obtain a discoloration preventing agent, comprising kojic acid and an amino acid containing sulfur as active ingredients and excellent in discoloration preventing effects on perishables. CONSTITUTION: This discoloration preventing agent respectively comprises preferably 0.01-1wt.% kojic acid and 0.01-1wt.% an amino acid containing sulfur. A yeast extract comprising the amino acid containing the sulfur, especially that containing >=1wt.% glutathione is preferred as the amino acid containing sulfur.
