PURPOSE: To obtain a coating material, consisting essentially of wheat flour and/or starches and containing an alkaline metal-binding soybean protein and capable of preventing the bursting from occurring in producing a fried food. CONSTITUTION: This coating material consists essentially of wheat flour and/or starches and contains an alkaline earth metal-binding soybean protein. When a fried food is heated in a microwave oven after freezing and preservation, not only the bursting is not caused but also the crispy texture and crunching chewiness are obtained.
