FIELD: enzyme industry. SUBSTANCE: method consists in adding N-protected amino acid to aqueous solution or suspension of proteaze providing inhibition of enzyme deactivation and improving its thermal stability and stability in storage. With added N-protected amino acids such as N-benzyloxycarbonyl-amino acids, metalloproteaze may be stabilized even in absence of excess calcium ions. As a result, enzyme storage is possible for a long-time period, while transportation and storage of liquid product are simplified. N- protected amino acids facilitate regeneration of metalloproteaze when used in coupling reaction between protected amino acids and amino acid esters. Especially marked effect is observed in reaction of N-benzyloxycarbonylaspartic acid with phenylalanine methyl ester in aspartal production. EFFECT: prolonged service life of enzyme. |
