FIELD: food industry. SUBSTANCE: dried fruit are washed and treated with carbon dioxide flow in supercritical state with imposing ultrasonic oscillations for sterilization and removal of cuticular layer from dried fruit surface. Then fruit are crushed into paste-like mass, which is mixed with crushed dry bread followed by homogenization, shaping, and drying of mixture. EFFECT: prepared dessert sugary products. 3 cl |
