This invention relates to the fermentation process of ethanol using starchy material, to increase the productivity and yield rate while reducing contaminantes, and the fermantation process comprises the continuos prior process and batch post process, wherein the prior process is replaced when the number of bacteria exceeds a million per 1 ml of the prior fermentation solution or the acidity exceeds 4 mN.
