The method cuts parallelepiped portions of cheese from cheese rounds supplied on a continuous band. The cheese (2) is driven in rotation around an axis, which passes approximately through the centre of the circular section of the cheese and perpendicular to this section. A continuous band (20), the thickness of which corresponds to the thickness of the portions required, is cut by a knife (22), driven by the jack (15) and the slider (11). The continuous band of cheese is then cut into the required sizes by a second cutter (17), powered by a second actuator (16), acting in a direction perpendicular to the continuous band of cheese.
