A method and a device are disclosed for producing portioned raw sausage, boiling sausage or the like, with a pre-determinable coarseness. It is proposed that, during the course of the process, sausage material of a coarser texture than that of the raw sausage should be introduced into a vacuum filling machine, compacted there in the usual way and discharged, and then immediately fed into the cutting set of a passing machine, then minced to the desired final texture and divided up into portions. The drive of the cutting set is interrupted during pauses in the portioning process like the conveyer pump of the sausage filling machine. When a vacuum filling machine and a passing machine (30) are used, a shaft driving the conveyer pump (12) of the sausage filling machine is extended in the direction of the pump outlet and connected to the cutting set of the passing machine which is flange-mounted on the sausage filling machine in such a way that its inlet immediately follows the pump outlet (18) and the filler pipe (20) of the sausage filling machine is connected to the outlet of the passing machine.
