PURPOSE: To obtain a testy cut bean curd having a high nutritive value by cooling a high-temperature soybean milk to a medium temperature so as to mix bittern therewith while pouring the soybean milk into a coagulation box. CONSTITUTION: A thick soybean milk at a high temperature is passed through a cooler 18, poured into a medium-temperature soybean milk tank 22, once stored and then fed through a pipeline 26 having a check valve 30 into a soybean milk stirring device 46 with a medium-temperature soybean milk feed pump 28. The soybean milk is subsequently passed through a horizontal shaking pipe 48 having a shaking cylinder 50 attached to a link 60 into a soybean milk coagulation box 64 and a coagulant solution 34 is further fed from a coagulant tank 36 into the coagulation box interlocking with the pump 28. Stirring plates 62 crossing the shaking direction of the shaking pipe at right angles are installed in a stirring socket 52 and the coagulant solution consisting essentially of bittern is stirred and mixed with the soybean milk to coagulate the soybean milk into bean curd to obtain tens of blocks of bean curd. |
