<p>PURPOSE: To provide a gas direct fire type oven safe in fire fighting by improving the thermal efficiency of a gas burner and surely cooling its exhaust gas. CONSTITUTION: A pan surrounding wall 19 made of a non-regenerative heat insulation material such as ceramic fiber is provided in the inner space of a rigid oven main body wall 11, so that the pan surrounding wall is separated from the oven main body wall by an exhaust jacket 24 and a funnel 32 communicating with the exhaust jacket is provided upright. A gas burner 28 is installed in a position just below a pan 14 surrounded by the pan surrounding wall and separated from the bottom surface of the pan so that a flame does not come into direct contact with the bottom surface. Thus, in a gas direct fire type oven in which the exhaust gas of the gas burner is guided outside through the exhaust jacket and the funnel from exhaust holes 20 opened and distributed in the pan surrounding wall, the lower surface of the exhaust jacket is closed with a bottom plate 25 in which many inlet ports 37 are opened and distributed so that the exhaust gas is cooled by air drawn to the funnel from the inlet ports.</p> |
