FIELD: food-processing industry. SUBSTANCE: poultry meat processing unit has cooling chamber with cool air supply device, drainage system and multitier conveyor. Each tier has plurality of branches, washing machine, liquid cryogen source and waterduct. Unit is further provided with heat-exchanger connected to liquid cryogen source through blocking-regulating device. Heat-exchanger has pipeline with equally spaced sprayers of evaporator, each positioned in cooling chamber above conveyor in zone defined by planes extending through adjacent branches. Water supply device is connected to high-pressure water source and has sprayers positioned in cooling chamber below evaporators of heat-exchanger. Water supply device has aeration system positioned between waterduct and high-pressure water source. Heat-exchanger inlet is connected with high-pressure water source and outlet is connected to washing machine. EFFECT: increased efficiency, wider operational capabilities and enhanced reliability in operation. |
