FIELD: food-processing industry. SUBSTANCE: fryer- desiccator has casing with airduct, inner chamber with heating members, parallel pans positioned one above the other and adapted for receiving product, fan positioned in lower part of casing, collector fixed on rear wall of inner chamber and provided with inlet and outlet channels, distributor with gates regulated by adjusting handle mounted on control panel. Collector is communicated through outlet channels with inner chamber cavity and through inlet channel with two-position distributing device, which is formed as shaft with two rigidly fixed gates. One gate is engageable with collector inlet channel and other gate is engageable with inlet channel of airduct, which is defined by inner chamber walls and fryer-desiccator casing, whose outlet channel is positioned on one casing wall. Door of fryer-desiccator is provided with channels communicating inner chamber cavity with atmosphere. EFFECT: increased efficiency, wider operational capabilities and enhanced reliability in operation. |
