Bread roll baking assembly

The baking assembly, esp. for bread rolls, takes a trolley with a number of vertically stacked baking plates and a trolley for fermentation with a number of vertically stacked baking plates and a trolley for fermentation with a number of vertically stacked tilting trough units. A push mechanism (6) gives a sliding movement to the tilting trough units from the fermenting trolley (4) over the baking plates of the baking trolley (5). A system (45) operates the tilting trough units, and a lifting mechanism (37) acts on the fermenting trolley (4).
